David Robledo is the sommelier at Santceloni since its inception. After training at important restaurants like Martín Berasategui, Zalacaín, Arzak and El Racó de Can Fabes, he arrives at Santceloni in 2001.
In addition to his work at the restaurant, Robledo participates as a speaker and adviser for different courses and is a member of the tasting committee of the most important wine guides. He is currently a professor at the prestigious Sommeliers Training Course at the Madrid Chamber of Commerce and gastronomic adviser and adviser for Minor Europe & Americas’s entire wine list.
Always active when it comes to the world of wine, he has never stopped training, continuously visiting wineries and wine areas around the world.
Santceloni’s wine list has been recognised as one of the most outstanding in the world by WineSpectator’s in its “Restaurant WineListAwards”, awards given to restaurants whose wine lists offer interesting selections, appropriate for their gastronomic offer and know how to attract a large sector of oenology lovers.
Santceloni has a wine list with over 1,200 wines, presented in an excellent manner, with offers that include some of the best wineries or select samples that tour the best wine regions.
Among the projects that the group is connected with is Tablafina, the latest concept created by the company in which it has selected the space’s wine list.
