The dining room is directed by Abel Valverde from Barcelona, trained in Gerona at the Castillo de Peralada Casino and the Santa Marta de LLoret de Mar Hotel, in Britain at Hambleton Hall Hotel, in Oakham, and in Can Fabes (1998-2001), after which he joined Santceloni.
His cordiality, discretion, perfect mastery of the service and encyclopaedic knowledge regarding cheeses (Santceloni has the largest selection of cheese in a restaurant, with over 300 types) has made him an indisputable member of the exclusive group of Spanish head waiters who, literally, are masters of the trade.
He currently is, in addition to head waiter at Santceloni, a professor at the Madrid Chamber of Commerce and F&B Adviser at Minor Europe & Americas.
Among his professional awards, it is worth mentioning the National Gastronomy Award for the Best Head Waiter in 2008 and various awards for Best Maître of the Year, awarded by several media.
